Nothing say fall cooking like chili, but PUMPKIN chili just screams it like toddlers fighting over a pinata. This chili is hearty, flavorful, and on the mild side. Great for the whole family. I usually serve it over rice. –Ellen
Ingredients
3 pounds ground beef or turkey
1 can of cannellini beans, rinsed (optional)
1 medium onion, chopped
1 can (15 oz) of 100% pure pumpkin
2 teaspoons salt
1 teaspoon pepper
2 teaspoons pumpkin pie spice
2 cans (10.75 oz each) condensed tomato soup, undiluted
3 bottles (12 oz. each) chili sauce, I use Heinz
1 teaspoon sugar
1.5 teaspoons chili powder
Directions
In a large Dutch oven or soup kettle, cook beef and onion over medium heat until meat is no longer pink; drain.
Add remaining ingredients; stir to mix well. (You can add chicken broth to reduce thickness, if desired.)
Bring to a boil over medium heat; reduce heat and simmer 1 hour.
This makes a lot of chili. Halve the recipe for a family of four or make the whole recipe and freeze half of it to have chili for another day with even less effort.
As you know, I ADORE pumpkin. Can you taste the pumpkin? Is it subtle? I’ve never combined pumpkin and tomato!

Yes you can! If you want the pumpkin flavor a little more intense, omit one of the cans of tomato soup. Ellen
Can this be made slow in a crock pot all day? I assume the meat needs to be browned before putting into the crock pot. Please let me know if you have a crock pot version!
Was trying to comment on your overal “we swear on a pile of Martha Stewart Living magazines” re: pumkin recipes. How do you ladies have the most ideal graphic ever for this?? Oh yes, you are amazing super-robots. Albeit, robots I am in love with, and I think this series is fun–thanks for encouraging me to get the pumpkin in my cupboard out of the can and into a cool recipe!

Made this last night! Kids asked for multiple servings of it! DELISH! The changes I made:
I made it in the slow cooker (5 hrs on low seemed to be perfect–made with raw meat)
Used a 29 oz can of pumpkin instead of the 15—I’m crazy like that!
Cut back on the Chili Sauce to 2 jars instead of 3.
Will definitely be making it again!!!
