This recipe makes one very satisfying lunch time serving. It is a lot of food for just 175 calories.
Now it may seem weird that this is such a small recipe, but I often just steal a bit of ground beef from whatever else I am cooking for dinner to make myself this interesting and flavorful lunch. I generally only make one serving at a time because I am the only person who likes it in my family and it does not keep very well for longer than a day or two because of the cucumber. Obviously, if you are feeding more people or would like a larger serving for dinner, you can increase it as desired.
This recipe kind of reminds me of a gyro, but with a zillion less calories. Try it on a pita for the full Mediterranean experience. Your taste buds and booty will thank you!

INGREDIENTS
1/4 cup browned extra lean ground beef
1 small cucumber, seeded and chopped
2 Tbsp plain Greek yogurt
1 Tbsp fresh chives, chopped
Salt and pepper to taste
DIRECTIONS
Mix all ingredients together.
Serve chilled or at room temperature.
