This is a tweaked version of a classic Weight Watchers recipe. One cup is about 130 calories if prepared with all extra lean ground beef. If you switch out half of the ground beef for extra lean ground turkey, the calorie count goes down to about 120 and you save on saturated fat. But be careful with ground turkey because not all varieties are necessarily healthier. The 85/15 fat content ground turkey actually has more calories than the 96/4 variety of hamburger. So if you are not using extra lean, skip it.
Another tip: I also highly recommend using Classico spaghetti sauce. It has lower calories than Prego and some Ragu varieties.
Most of the time I try to make a double batch because it freezes very well. This soup is a delicious and satisfying way to keep you on the right track for your fitness goals.

INGREDIENTS
1 lb. extra lean ground beef OR 1/2 lb. extra lean ground beef & 1/2 lb. extra lean ground turkey
1 cup diced onion, fresh or frozen
1 medium green pepper, chopped
1 medium yellow pepper, chopped
1 tsp. Italian Seasoning
Salt and pepper to taste
1 (14.5 oz.) fire roasted diced tomatoes
1 (24 oz) jar Classico Fire Roasted Tomato & Garlic Spaghetti Sauce
3 cups water
1 Tbsp. Beef Bouillon
1 Tbsp fresh thyme
1 cup cooked brown rice
DIRECTIONS
Brown the ground meat with the onion and chopped peppers.
Sprinkle with the Italian seasoning, salt, and pepper.
Drain the meat and add to your soup pot.
Add the tomatoes, spaghetti sauce, water, bouillon, thyme and rice.
Bring to a boil over medium heat then reduce heat to simmer for 1 hour.
