2 teaspoons olive oil
1 cup onion
1cup pasta sauce
1cup pizza sauce
16 ounces mozzarella cheese, shredded
2 eggs
1 cup milk
1 tablespoon olive oil
1 cup flour
1/2 teaspoon salt
1/4 cup Parmesan, grated
Add-ins:
1 pound Italian sausage, I use hot
8 ounces mushrooms
1/2 package pepperoni
1/2 cup black olives
1/2 cup red pepper
This is a dish I come to time and again, because it is fast and easy. Inspired by a dish that Robin Miller makes, Upside Down Pizza has become a family favorite. I have shared this recipe at least 10 times with friends. The add-ins give you an idea of some of the things we have added to this dish. Anything you would put on a pizza works.
Heat 2 teaspoons of oil in a skillet over medium heat. Add your add-ins now. If you need to cook the sausage, do that first, then soften your veggies. When meat is cooked and veggies are soft, add the pizza sauce and the pasta sauce and bring to a simmer. Simmer for 2 minutes. Remove from the heat and transfer to the bottom of a 13 by 9 inch baking dish. Top with mozzarella cheese.
In a medium bowl, whisk together eggs, milk, and oil until blended. Whisk in flour and salt until well-blended. Pour mixture over the sauce in the pan. Sprinkle with Parmesan.
Bake 35 minutes until golden brown. Let stand for 5 minutes before slicing.
