Sometimes you just get lucky as a mom. Like when you come downstairs to discover your teenage daughter has made cinnamon chip pancakes from scratch. Now I have a confession. I have never made pancakes from anything but a mix or Bisquick.
This is weird when I really think about it because more often than not, I bake completely from scratch. It’s not a shocker, but just like my cakes, these pancakes were superior. The daughter became the teacher and a wonderful breakfast was had by all.

INGREDIENTS
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1 1/4 cup cinnamon chips
DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar.
Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Stir in cinnamon chips.
Heat a lightly oiled griddle or frying pan over medium high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
When edges look dry and bubbles begin to form and break, flip over.
Brown on the other side and serve hot.
