This is the crockpot recipe for people who claim they don’t like anything that comes out of a slow cooker. It is scrumptious. And versatile — you can add chicken broth to the finished product to make soup. — Ellen
Ingredients
6 boneless chicken breasts (about 6 oz. each)
2 cans diced tomatoes (I use Hunt’s Basil, Garlic, and Oregano or Fire Roasted)
2 cans cannellini beans, rinsed
1 large yellow pepper, sliced into sticks
2 Tablespoons balsamic vinegar
1 Tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon minced garlic
1/2 teaspoon dried basil
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
Directions
Mix all ingredients in a 3 quart or larger slow cooker. Cover and cook on low 6 to 8 hours. That’s it. Enjoy!
This sounds like one I should try. Quick question – what size can of beans and what size can of tomatoes?
