I have a really awesome healthy version of this that tastes delicious, takes about 30 minutes plus to make, and makes a huge mess in my kitchen. This is not that dish. This is my lazy girl version that everyone requests, takes no time at all, and requires almost no clean-up. Happy Super Bowl!!
1 8oz package of cream cheese
1 can black beans —drained
1 jar of your favorite salsa
12oz package of shredded cheese
In 8 inch dish, soften the cream cheese and spread it along the bottom. Spread a layer of black beans over the cream cheese. Pour a layer of salsa over the black beans and cream cheese. Spread a layer of shredded cheese over the other layers.
Bake at 350 degrees for 30 minutes.
Eat!! Yummy!
Addendum from Ellen: Tip that Erin shared with me as I was making this. She squishes the cream cheese packet in her hands to soften it. I had never done this before, but it worked well.
I think that cream-cheese-smushing skill might come in handy in any variety of contexts, frankly. But that’s a post for another time. For THIS time I’m going to say that the bean dip sound amazing and I moved my chin just in time to prevent myself from drooling on the keyboard. I bet a little snippet of scallion in that gooey goodness might be good too…
