Italian Sausage and Tortellini Soup

This is an old Woman’s Day recipe that everyone loves.  Erin

1 lb hot Italian Sausage

1 large onion chopped

2 carrots peeled and chopped

4 cups chicken broth

1/2 Teaspoon Italian herb seasoning

1/2 Teasp00n salt

1/4 Teaspoon pepper

1 can tomato sauce

1 can tomatoes in juice, chopped, reserve juices

2 cups sliced mushrooms

1 10oz package tortellini

1 zucchini, quartered lengthwise and sliced

2 Tablespoon grated Parmesan Cheese

1. Cook sausage and add to the slow cooker with the carrots, onions, broth, Italian Seasoning, salt, pepper, tomato sauce, tomatoes in juice, and mushrooms.

2. Cook on High for 3-4 hours or on Low for 6-10 hours.

3. Meanwhile cook tortellini according to package directions. Drain.

4. Add zucchini and tortellini to the slow cooker and cook on high for 15-20 minutes. Spoon into bowls and top with Parmesan cheese.
