I could personally be the spokesperson for Bisquick for all of the great things it has brought into my life. My other dear Ellen, my Maine Ellen, introduced me to this recipe that used to be on the Bisquick box. It’s not there anymore, so you NEED this one. Really. Your kids will lick your hands in gratitude.
2/3 cup Bisquick
1/2 cup Parmesan cheese
1/2 teaspoon garlic salt (The original recipe said you could use salt, but don’t. Better this way.)
1/2 teaspoon paprika (I liked smoked paprika better. Do what you gotta do.)
3 boneless, skinless chicken breasts (cut cross-wise into 1/2 inch strips)
1 egg, slightly beaten
3 Tablespoons butter
Heat oven to 450 degrees. Line the cookie sheet with foil.
Mix Bisquick mix, cheese, garlic salt, and paprika in a gallon size resealable plastic food-storage bag. Dip half the chicken strips in egg. Place them in he bag with the Bisquick mixture. Seal bag; shake to coat. Place chicken on the foil-lined cookie sheet. Repeat with the remaining chicken. Drizzle butter over chicken.
Bake 12-14 minutes, turning after about 6 minutes.
