I loved blueberries even before I lived in Maine, but my time in that beautiful state with a bountiful and delicious supply right at my fingertips just sealed the deal. I have lots of blueberry recipes but this yummy bread is a winner and runaway favorite with my crew. Everyone will love it and you by extension. Get baking!
1 3/4 cup yogurt (I like Greek)
1/4 cup sugar
2 TBSP milk
1 TBSP oil
1 TBSP vanilla
1 1/2 cups flour
2 TSP baking powder
1/2 TSP baking soda
1/2 TSP salt
1 cup blueberries
For the topping:
1/4 cup sugar
2 TBSP flour
1 TBSP butter
Preheat oven to 350 degrees.
Spray 9- x 5-inch loaf pan with cooking spray.
In a medium bowl, mix the yogurt, sugar, eggs, milk, oil, and vanilla until combined.
In a separate bowl, mix the flour, baking powder, baking soda, and salt.
Slowly add the yogurt mixture to the flour mixture.
Fold in the blueberries.
Add the bread dough to the prepared pans.
In a small bowl, make the topping using your hand to mix the butter, flour, and sugar until crumbly. Then evenly sprinkle over the bread.
Bake for 40-50 minutes.
