This is Erin’s breakfast workhorse. It has been present at every Christmas morning, fed countless sleepover guests, and even worked as dinner when she needed it too. You don’t work this hard and taste this good and not get labelled “The Best.”
Just a little note: if bacon is not your thing or you just run out or you just want some other flavor, this casserole tastes delicious with sausage or ham too. Also, you can use whole milk or skim milk with no issues with flavor. I recently used hot Italian sausages and mozzarella and a dash of Italian seasoning to create an Italian breakfast casserole that was so good that I felt the need to write about it.
INGREDIENTS
6 eggs
2 cups milk
1 pound bacon, cooked (I like it on the crispy side)
1/2 teaspoon salt
1 cup shredded cheddar cheese
6 slices of bread, cubed
DIRECTIONS
Preheat oven to 350 degrees.
Spray 11 by 13 inch pan with cooking spray.
Place bread cubes on the bottom.
Add the bacon.
Add the cheese.
In another bowl, combine the milk, eggs, and salt.
Pout mixture over the ingredients in the pan.
Bake for 45 minutes.
