Feel like something beefy, cheesy, and comforting, but you’re watching your calories? This recipe fits the bill! Using My Fitness Pal, I calculated that 1/6 of the casserole is about 345 calories.
Healthy tip: Either use all extra lean ground beef or use half ground beef and half extra lean ground turkey. Never use anything but extra lean ground turkey because the other varieties are packed with more fat and calories than lean hamburger.
This casserole freezes really well, too. Just assemble (omitting the green onion or cilantro topping) and wrap tightly with foil. To prepare, thaw before heating. Follow the recipe to top with green onions or cilantro, as desired.
In all, this Mexican Casserole recipe is the bomb because it is stick to your ribs satisfying without adding bounce to your booty. Doesn’t hurt that it’s super easy and convenient to make, too.

INGREDIENTS
1 lb. extra lean ground beef OR 1/2 lb. ground beef and 1/2 lb. extra lean ground turkey
1/2 cup chopped onion, fresh or frozen
1 green pepper, chopped
1 (15 oz.) can diced tomatoes
6 oz. frozen corn
3 Tbsp black bean and corn salsa
1/2 package low sodium taco mix
7 or 8 small corn tortillas
1/2 cup non-fat sour cream
1/4 cup plain Greek yogurt
1/2 cup shredded Mexican cheese blend, divided
Optional: To spice it up, you can add the full package of taco mix and/or 1/4 cup canned jalapeno slices, chopped.
Also, could top with 1/4 cup minced green onions or 1/4 cup chopped fresh cilantro.
DIRECTIONS
Heat oven to 350 degrees.
Brown ground meat with the chopped onion and pepper. Drain well and return to skillet.
Add corn, tomatoes, and taco seasoning, mix well, reduce heat, and simmer for 5 minutes.
Mix sour cream and Greek yogurt together and set aside.
Meanwhile spray a 9x11 dish with nonstick cooking spray. Cut each tortilla in half and arrange 7 or 8 of these halves in the bottom of the dish, overlapping slightly.
Spoon half of beef mixture over the tortillas.
Spoon sour cream/yogurt mixture over the beef.
Top evenly with the salsa.
Sprinkle with 1/4 cup of the cheese.
Top with remaining tortilla halves and remaining beef mixture.
Sprinkle with remaining cheese and green onions (if desired).
Bake at 350 degrees for 25 - 30 minutes or until golden.
Top with cilantro (if desired).
