Shrove Tuesday Pancakes

What is Shrove Tuesday?  Always 47 days before Easter, it is the last day to eat up all of the foods Christians abstain from during the season of Lent. Shrove comes from the old word “shrive” which mean “to confess”. Back in the day, Christians confessed their sins before the Lenten season. Pancakes are a traditional food served on this day, and who doesn’t like Breakfast for Dinner? Other names for this day are “Fat Tuesday” and, of course, Mardi Gras.

Mardi Gras is coming! Give Fat Tuesday what it wants. PANCAKES! Shrove Tuesday Pancakes Recipe.

These pancakes are what we call “plain fancy” in my house which means they are the “special” pancakes. They require some extra ingredients we don’t always have on hand. Totally worth it though! This recipe makes about 15 pancakes, so we always double it.

Shrove Tuesday Pancakes

Shrove Tuesday Pancakes

INGREDIENTS

2 eggs

2 cups flour

3 Tablespoons sugar

2 Teaspoons baking powder

1 Teaspoon baking soda

1 Teaspoon salt

2 1/2 cups buttermilk

4 Tablespoon unsalted butter, melted

1/2 Teaspoon vanilla

1 to 2 Tablespoons vegetable oil

DIRECTIONS

Beat the eggs on medium speed with an electric mixer until they are good and frothy.

Add flour, sugar, baking powder, baking soda, salt, buttermilk, melted butter, and vanilla.

Stir just until batter is smooth and no lumps of flour can be seen. Do not overmix.

Coat griddle with vegetable oil and preheat over medium heat. Pour about 1/3 cup of mix onto hot griddle. When small divets appear in pancake top from the bubbles popping, flip over.

Eat with good quality maple syrup. Enjoy!

    This recipe is almost the same as the one I use for my family (though amounts in yours are doubled.) It now makes sense that you then double yours to feed your family. I’ve been making 4x or 5x mine to feed my crew. (And just wait until your kids get even older!) They seem to associate a day off from school with pancakes for lunch.

    Other variations we like are to sprinkle pancakes with blueberries or chocolate chips or use almond extract instead of vanilla. Sometimes our oldest makes a strawberry sauce to go on top. All excellent choices.
